While the peppers soak, cube the sirloin. Season both the roast and shank with salt and pepper.

Step 3: Blend the Marinade

Remove the peppers from the warm water, snip off the stems over the sink, and let the seeds fall out. Add the softened peppers to the blender. Blend until smooth.

Step 4: Marinate the Meat

Step 7: Shred

How to Make Birria Tacos

Step 1: Warm the Tortillas

Warm the tortillas in a microwave wrapped in a damp paper towel or heat them on a skillet. This keeps them pliable.

Step 2: Dip and Fill

Ingredients

  • 6 whole cloves

  4. Marinate the meat in the blended sauce for at least 2 hours or overnight.
  5. Set Instant Pot to sauté and cook chopped onion in oil until soft and golden.
  6. Add marinated meat, bay leaves, cinnamon stick, cloves, and enough chicken stock to cover.
