  • 1 carrot, sliced
  • 1 medium onion, chopped
  • 1 garlic clove
  • ½ green bell pepper
  • 4 ounces mushrooms
  • 1 cup ketchup
  • 1 tablespoon mustard
  • 2 teaspoons Worcestershire sauce
  • 2 teaspoons apple cider vinegar
  • 2 tablespoons brown sugar
  • ¼ teaspoon red pepper flakes
  • 1 teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Preheat oven to 350°F and grease a loaf pan.
  2. In a large bowl, combine ground beef, turkey, eggs, and breadcrumbs.
  3. Add carrot, onion, garlic, and green pepper to a food processor and pulse until finely chopped.
  4. Heat oil in a skillet and sauté vegetables for 2 minutes.
  5. Add mushrooms and cook 1 minute more. Let cool slightly.
  6. In a bowl, mix ketchup, mustard, Worcestershire sauce, vinegar, brown sugar, red pepper flakes, salt, and pepper.
  7. Add most of the sauce mixture to the meat mixture.
  8. Stir in sautéed vegetables.
  9. Shape mixture into loaf pan.
  10. Bake for 1 hour 15 minutes.
  11. Spread remaining glaze over top and bake another 15 minutes.
  12. Let rest before slicing and serving.

Notes

  • Do not overmix the meat mixture.
  • Finely chopped vegetables keep the loaf moist.
  • Leftovers make amazing sandwiches.
  • You can substitute BBQ sauce for part of the ketchup glaze for extra smoky flavor.
