Ingredients

  • 1 whole chicken, rinsed and patted dry
  • 3 whole lemons
  • 4 sprigs rosemary
  • 3/4 cup softened butter
  • Salt and black pepper to taste


Instructions

  1. Preheat the roaster oven to 400°F.
  2. Zest 2 lemons and finely chop rosemary leaves from 1 sprig.
  3. In a bowl, combine softened butter, lemon zest, rosemary, salt, and pepper.
  4. Pat the chicken completely dry with paper towels.
  5. Place the chicken breast-side up inside the roaster oven insert.
  6. Rub the butter mixture all over the chicken, under the skin, and inside the cavity.
  7. Cut the lemons in half and squeeze the juice of 1 lemon over the chicken.
  8. Stuff the remaining lemon halves and rosemary sprigs inside the cavity.
  9. Roast uncovered for 1 hour 15 minutes to 1 hour 30 minutes until golden brown and cooked through.
  10. Check that the internal temperature reaches 165°F.
  11. Remove from the roaster oven and tent loosely with foil.
  12. Let the chicken rest for 10 to 15 minutes before carving.
  13. Slice and serve warm.
