This mini turkey meatloaf recipe is juicy, flavorful, and perfect for busy weeknights. Made with lean ground turkey, savory seasonings, and a sweet tangy glaze, these individual meatloaves cook fast and make an easy family dinner or meal prep favorite.

Ingredients

  • 2 pounds ground turkey
  • 2 eggs
  • 1/2 cup seasoned breadcrumbs
  • 1 small yellow onion, finely diced
  • 3 garlic cloves, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh thyme
  • 2 tablespoons Worcestershire sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon butter or olive oil
  • 1/3 cup ketchup
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons brown sugar


Instructions

  1. Preheat oven to 375°F. Line a baking sheet with parchment paper.
  2. Heat butter or olive oil in a skillet over medium heat. Cook onions until softened, about 4 minutes. Add garlic and thyme and cook another minute. Let cool slightly.
  3. In a large bowl, combine ground turkey, eggs, breadcrumbs, parsley, Worcestershire sauce, salt, pepper, and cooled onion mixture.
  4. Mix gently until just combined.
  5. Divide mixture into 8 portions and shape into small loaves.
  6. Place mini meatloaves on prepared baking sheet.
  7. In a small bowl, mix ketchup, balsamic vinegar, and brown sugar.
  8. Brush half the glaze over the meatloaves.
  9. Bake for 15 minutes.
  10. Brush with remaining glaze and bake another 5 to 10 minutes until the internal temperature reaches 165°F.
  11. Let rest for 5 minutes before serving.

  • Do not overmix the turkey mixture.
  • Use a thermometer for perfectly juicy meatloaf.
  • Mini meatloaves freeze beautifully for meal prep.
  • Ground chicken also works well in this recipe.
