  • 1 boneless beef top loin roast (3 to 4 pounds)
  • 4 teaspoons minced garlic, divided
  • 1 tablespoon plus 1 teaspoon fresh thyme leaves
  • 6 tablespoons olive oil, divided
  • Salt and black pepper to taste
  • 2 heads cauliflower, cut into florets
  • 2/3 cup Italian-seasoned breadcrumbs


Instructions

  1. Preheat your oven to 325°F.
  2. Pat the roast dry with paper towels.
  3. Rub 2 teaspoons minced garlic over the entire roast.
  4. Press the thyme evenly over the beef.
  5. Place the roast fat-side up on a rack in a shallow roasting pan.
  6. Insert an oven-safe meat thermometer into the thickest part of the roast.
  7. Roast for 1¼ to 1½ hours for medium rare or 1½ to 1¾ hours for medium.
  8. While the roast cooks, toss cauliflower florets with remaining garlic and 4 tablespoons olive oil on a baking sheet.
  9. Season cauliflower with salt and pepper.
  10. Cover with foil and bake for 45 minutes on a lower oven rack.
  11. Combine breadcrumbs with remaining olive oil.
  12. Remove foil from cauliflower and sprinkle breadcrumb mixture evenly over the top.
  13. Continue baking uncovered for 30 to 45 minutes until golden and crisp.
  14. Remove roast from oven when internal temperature reaches 135°F for medium rare or 145°F for medium.
  15. Tent loosely with foil and rest for 15 to 20 minutes.
  16. Slice and serve with roasted cauliflower.
