Ingredients

  • 2 teaspoons olive oil
  • 1 small yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 1/2 teaspoon chopped rosemary
  • 1 pound ground turkey
  • 1/3 cup breadcrumbs
  • 1/4 cup chopped parsley
  • 1 large egg
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Cooking spray
  • 1/4 cup ketchup
  • 1 tablespoon brown sugar


Instructions

  1. Heat olive oil in a skillet over medium heat. Add onion and cook until softened and lightly golden.
  2. Stir in garlic and rosemary and cook for about 1 minute until fragrant.
  3. Let the onion mixture cool slightly.
  4. In a large bowl, combine ground turkey, breadcrumbs, parsley, egg, Worcestershire sauce, Dijon mustard, salt, pepper, and the cooked onion mixture.
  5. Mix gently until just combined.
  6. Divide the mixture into two small loaves.
  7. Lightly spray the air fryer basket with cooking spray.
  8. Place the meatloaves into the basket.
  9. Air fry at 350°F for 30 minutes, flipping halfway through cooking.
  10. In a small bowl, stir together ketchup and brown sugar.
  11. Spoon the glaze over the meatloaf.
  12. Cook for 2 more minutes until the glaze is sticky and set.
  13. Check that the internal temperature reaches 165°F before serving.

Notes

  • Use ground turkey with dark meat for juicier meatloaf.
  • Do not overmix the meat mixture.
