Hey, I’m Chloe! You know those nights when you want something warm and comforting, but the idea of chopping a million veggies or cleaning a pile of dishes feels like too much? This Ground Turkey Pot Pie is exactly the kind of recipe I reach for on those days. It’s simple, hearty, and has that classic pot pie vibe you know and love — but with a fun, flaky twist thanks to buttery puff pastry on top.

Why This Ground Turkey Pot Pie Is a Weeknight Hero

Pot pie usually feels like a project, but this version keeps things easy without losing any of the comfort. Using ground turkey speeds up the cooking process, and frozen mixed veggies cut down on prep time. Add in condensed soup for a super creamy base, and suddenly you’ve got a one-pan dinner that tastes like it simmered all afternoon.

Ingredients You Need for Ground Turkey Pot Pie

Everything here is simple, familiar, and easy to grab from your pantry or freezer.

  • Ground Turkey: I like using 93 percent lean, but use your favorite. Ground turkey cooks fast and keeps things light while still delivering great flavor.
  • Frozen Mixed Vegetables: No chopping required. Corn, peas, carrots, and green beans work perfectly here. You can add extra peas like the original recipe does.
  • Condensed Cream of Potato Soup: This creates that thick, creamy filling without needing to make a roux. Cream of chicken works too if you prefer it.
  • Puff Pastry
  • Seasonings: Garlic powder, thyme, parsley, onion powder, pepper, and salt bring out all the comforting pot pie flavors.
  • Egg Wash: Just one egg and a splash of water will give the puff pastry its golden shine.

For precise amounts, check the recipe card at the end of the post.

How to Make Ground Turkey Pot Pie

Brown the Turkey

Heat oil, add ground turkey, sprinkle with garlic powder if you like, and cook until browned and no longer pink.

Stir in the condensed soup, frozen veggies, peas, and seasonings. Mix well and press the filling into an even layer in your oven-safe skillet.

Prep the Puff Pastry

Cut the puff pastry into small squares. No need to be precise — rustic is perfect here. Arrange the squares over the filling so everything is covered.

Brush with Egg Wash

This step gives your pastry that perfect bakery-style golden color.

Bake Until Golden

Bake until the pastry puffs up and the filling bubbles underneath. Let it rest for a few minutes before serving.

Tips for Making the Best Ground Turkey Pot Pie

Prep It Ahead of Time

You can make the filling up to two days ahead. Just wait to add the puff pastry until right before baking.

Want It Creamier?

Stir in two or three tablespoons of milk when you add the soup.

Swap the Meat

Leftover turkey, rotisserie chicken, or cooked ground beef all work if you want to change things up.

Freeze-Friendly

This pot pie freezes beautifully — especially in individual portions for easy grab-and-go lunches.

Don’t Stress the Puff Pastry Layout

Imperfect squares and overlapping corners make this dish feel rustic and homey. It will puff up gorgeously no matter what.

How to Serve Your Ground Turkey Pot Pie

Serve with something simple like a side salad, roasted broccoli, or even a little crusty bread if you’re feeling extra cozy. The filling is already hearty, so the sides can stay easy.

Wrapping It Up

Ground Turkey Pot Pie is everything I love about comfort food — warm, creamy, cozy, and completely doable on a weeknight. It’s one-pan magic that turns simple ingredients into a satisfying dinner the whole family will love. When life gets busy, this pot pie is exactly the kind of recipe that feels like a win.
