  • 1 Wagyu Beef Tenderloin Roast
  • 1/4 cup Dijon mustard
  • 3 tablespoons fresh rosemary, chopped
  • 3 tablespoons fresh sage, chopped
  • 3 tablespoons fresh thyme leaves
  • 3 tablespoons fresh oregano, chopped
  • 1 tablespoon kosher salt
  • 1 tablespoon black pepper
  • 1/2 cup sour cream
  • 23 tablespoons prepared horseradish
  • 2 teaspoons steak seasoning


Instructions

  1. Preheat oven or grill to 250°F.
  2. Trim silverskin and tie if desired.
  3. Coat with Dijon mustard.
  4. Season and press herbs onto the surface.
  5. Let sit at room temperature for 45–60 minutes.
  6. Roast until internal temp reaches 110–115°F.
  7. Sear at high heat for 5–10 minutes.
  8. Rest for 10 minutes before slicing.
  9. Mix sour cream, horseradish, and seasoning.
  10. Serve with horseradish cream.
