- 1/4 cup Dijon mustard
- 3 tablespoons fresh rosemary, chopped
- 3 tablespoons fresh sage, chopped
- 3 tablespoons fresh thyme leaves
- 3 tablespoons fresh oregano, chopped
- 1 tablespoon kosher salt
- 1 tablespoon black pepper
- 1/2 cup sour cream
- 2–3 tablespoons prepared horseradish
- 2 teaspoons steak seasoning
Instructions
- Preheat oven or grill to 250°F.
- Trim silverskin and tie if desired.
- Coat with Dijon mustard.
- Season and press herbs onto the surface.
- Let sit at room temperature for 45–60 minutes.
- Roast until internal temp reaches 110–115°F.
- Sear at high heat for 5–10 minutes.
- Rest for 10 minutes before slicing.
- Mix sour cream, horseradish, and seasoning.
- Serve with horseradish cream.
