- ⅔ cup panko breadcrumbs
- ½ cup chopped onion
- 1 tablespoon barbecue sauce
- 1 tablespoon mustard
- ½ teaspoon garlic powder
- 1 ½ teaspoons chili powder
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 egg, lightly beaten
- ⅓ cup brown sugar
- ½ cup ketchup
- 2 teaspoons Dijon mustard
- ¼ teaspoon ground nutmeg
Instructions
- Preheat oven to 350°F and lightly grease a 12-cup muffin tin.
- In a small bowl, mix together the brown sugar, ketchup, Dijon mustard, and nutmeg to make the sauce.
- In a large mixing bowl, combine the ground beef, breadcrumbs, onion, barbecue sauce, mustard, garlic powder, chili powder, salt, pepper, and egg.
- Mix gently until just combined.
- Divide the meat mixture evenly among the muffin cups and lightly press into place.
- Bake for 15 minutes.
- Carefully blot any excess grease with paper towels if needed.
- Spoon the sauce generously over each mini meatloaf.
- Return to the oven and bake another 10 to 15 minutes, or until the internal temperature reaches 160°F.
- Let rest for a few minutes before serving.
