Description

This Mini Meatloaf Recipe is juicy, flavorful, and perfect for busy weeknights. Made with ground beef, breadcrumbs, and a sweet tangy glaze, these mini meatloaf muffins bake quickly and pair perfectly with mashed potatoes or roasted vegetables.


Ingredients

  • 1 ½ pounds lean ground beef or ground turkey
  • ⅔ cup panko breadcrumbs
  • ½ cup chopped onion
  • 1 tablespoon barbecue sauce
  • 1 tablespoon mustard
  • ½ teaspoon garlic powder
  • 1 ½ teaspoons chili powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 egg, lightly beaten
  • ⅓ cup brown sugar
  • ½ cup ketchup
  • 2 teaspoons Dijon mustard
  • ¼ teaspoon ground nutmeg


Instructions

  1. Preheat oven to 350°F and lightly grease a 12-cup muffin tin.
  2. In a small bowl, mix together the brown sugar, ketchup, Dijon mustard, and nutmeg to make the sauce.
  3. In a large mixing bowl, combine the ground beef, breadcrumbs, onion, barbecue sauce, mustard, garlic powder, chili powder, salt, pepper, and egg.
  4. Mix gently until just combined.
  5. Divide the meat mixture evenly among the muffin cups and lightly press into place.
  6. Bake for 15 minutes.
  7. Carefully blot any excess grease with paper towels if needed.
  8. Spoon the sauce generously over each mini meatloaf.
  9. Return to the oven and bake another 10 to 15 minutes, or until the internal temperature reaches 160°F.
  10. Let rest for a few minutes before serving.
