  • 2 pounds ground beef
  • 3/4 cup quick-cooking oats
  • 1 cup finely chopped onion
  • 3/4 cup milk
  • 2 large eggs, lightly beaten
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons kosher salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/3 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon yellow mustard


Instructions

  1. Preheat the oven to 350°F.
  2. In a large bowl, combine the ground beef, quick oats, onion, milk, eggs, Worcestershire sauce, salt, pepper, garlic powder, and onion powder.
  3. Mix gently with your hands until just combined. Do not overmix.
  4. Transfer the mixture into a 9×5-inch loaf pan and smooth the top.
  5. In a small bowl, stir together the ketchup, brown sugar, and mustard.
  6. Spread half the glaze over the top of the meatloaf.
  7. Bake uncovered for 1 hour.
  8. Carefully drain excess grease from the pan if needed.
  9. Spread the remaining glaze over the top.
  10. Return to the oven for another 10 minutes, or until the internal temperature reaches 160°F.
  11. Let the meatloaf rest for 15 minutes before slicing and serving.

Notes

Use quick oats for the best texture. Avoid overmixing the meat mixture. Letting the meatloaf rest keeps the slices together nicely. Leftovers make amazing sandwiches. Freeze individual slices for quick future meals.
