  • 2 pounds meatloaf mix (beef, pork, and veal)
  • 3/4 cup yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 2/3 cup seasoned panko breadcrumbs
  • 1 tablespoon extra panko for topping
  • 1/2 cup grated Parmesan cheese
  • 1 1/2 teaspoons Italian seasoning
  • 1 1/2 teaspoons kosher salt
  • 1/2 teaspoon black pepper
  • 1 cup marinara sauce
  • 2 large eggs, lightly beaten
  • 8 ounces low moisture mozzarella cheese
  • 1/2 cup mozzarella, shredded
  • Remaining mozzarella cut into cubes


Instructions

  1. Preheat the oven to 350°F. Spray a 9×5 inch loaf pan with nonstick spray.
  2. In a large bowl, combine the meatloaf mix, onion, garlic, panko breadcrumbs, Parmesan cheese, Italian seasoning, salt, pepper, 1/2 cup marinara sauce, and eggs. Mix until just combined.
  3. Fold in the cubed mozzarella cheese.
  4. Shape the mixture into a loaf and place it in the prepared loaf pan.
  5. Bake for 55 minutes.
  6. Remove the meatloaf from the oven and top with the remaining marinara sauce, shredded mozzarella, and extra panko breadcrumbs.
  7. Bake another 10 to 15 minutes or until the internal temperature reaches 155°F.
  8. Drain excess grease if needed and let the meatloaf rest for 10 minutes before slicing and serving.

  • Use your favorite marinara sauce for the best flavor.
  • Do not overmix the meat mixture or the meatloaf may turn tough.
