Description

This Instant Pot Cowboy Spaghetti is a quick and easy one pot comfort dinner loaded with beef, bacon, beans, and cheesy goodness. Everything cooks together for bold, rich flavor in a fraction of the time, making it perfect for busy weeknights.


Ingredients

  • 8 oz spaghetti
  • 4 slices bacon
  • 1 lb ground beef
  • 1 cup onion, diced
  • 2 cups beef broth
  • 3 tbsp Worcestershire sauce
  • 2 tbsp chili powder
  • 1 tbsp cumin
  • 1 tsp garlic salt
  • 1 tsp oregano
  • 1 can kidney beans
  • 2 cans tomato sauce
  • 1 can diced tomatoes with green chilies
  • 1 1/2 cups shredded cheese


Instructions

  1. Turn Instant Pot to sauté and cook bacon. Remove and set aside.
  2. Brown ground beef and onion in bacon grease.
  3. Add broth and scrape bottom of pot.
  4. Stir in seasonings.
  5. Layer spaghetti on top without stirring.
  6. Add beans, tomato sauce, and diced tomatoes.
  7. Pressure cook on high for 4 minutes.
  8. Let natural release for 10 minutes, then vent.
  9. Stir, add cheese, and top with bacon.

Notes

Do not skip the deglazing step to avoid burn warnings. Let the spaghetti rest after cooking to thicken the sauce. Add extra cheese when reheating for best texture.
