  • 1 pound lean ground beef
  • 3/4 cup panko breadcrumbs
  • 1/2 cup low-sugar ketchup, divided
  • 1/2 cup onion, diced
  • 1 egg
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons garlic, minced
  • Salt and pepper, to taste
  • 1 tablespoon dried parsley


Instructions

  1. Preheat the oven to 350°F and line a baking sheet or loaf pan with parchment paper or foil.
  2. In a large bowl, combine the ground beef, breadcrumbs, half of the ketchup, onion, egg, Worcestershire sauce, garlic, parsley, salt, and pepper.
  3. Gently mix until just combined. Avoid overmixing.
  4. Shape the mixture into a loaf and place onto the prepared pan.
  5. Bake for 45 minutes.
  6. Remove from the oven and spread the remaining ketchup over the top. Sprinkle with dried parsley.
  7. Return to the oven and bake another 10 minutes or until the center reaches 160°F.
  8. Let the meatloaf rest for 10 minutes before slicing and serving.
