Ingredients

  • 2 pounds ground beef
  • 1/2 onion, chopped
  • 3 tablespoons fresh parsley, chopped
  • 3/4 cup Italian breadcrumbs
  • 1/2 cup milk
  • 1 tablespoon Worcestershire sauce
  • 2 eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup ketchup
  • 2 tablespoons balsamic vinegar
  • 3 tablespoons brown sugar


Instructions

  1. Line the crockpot with foil and spray lightly with nonstick cooking spray.
  2. In a large bowl, combine the beef, onion, parsley, breadcrumbs, milk, Worcestershire sauce, eggs, garlic powder, salt, and pepper.
  3. Mix gently until just combined.
  4. Shape the mixture into a large oval loaf and place inside the crockpot.
  5. In a small bowl, whisk together the ketchup, balsamic vinegar, and brown sugar.
  6. Brush half the glaze over the meatloaf and reserve the remaining glaze.
  7. Cook on LOW for 6 hours or HIGH for 3 hours until the internal temperature reaches 160 degrees F.
  8. Brush the remaining glaze over the top before serving.
  9. Let rest for several minutes before slicing.

  • Use 85/15 ground beef for the best texture.
  • Avoid overmixing the meat mixture.
  • Foil makes cleanup much easier.
  • Leftovers make amazing sandwiches the next day.
