Description

This Cowboy Spaghetti Casserole is the ultimate cheesy, hearty comfort bake. Loaded with smoky bacon, seasoned beef, beans, and rich tomato sauce, it brings bold Tex Mex inspired flavor into one easy oven dish. Perfect for busy weeknights, meal prep, and feeding a hungry crowd.


Ingredients

  • 12 oz spaghetti
  • 8 slices bacon, chopped
  • 1 lb ground beef
  • 1 onion, diced
  • 1 can kidney beans, drained
  • 1 can tomato sauce
  • 1 can diced tomatoes with green chilies
  • 1 can cream of chicken soup
  • 2 tbsp Worcestershire sauce
  • 1 packet taco seasoning
  • 3 cups shredded cheese (divided)


Instructions

  1. Preheat oven to 350°F.
  2. Cook spaghetti until al dente. Drain and set aside.
  3. Cook bacon until crispy. Remove and set aside.
  4. In the same pan, cook ground beef and onion until browned.
  5. Stir in tomato sauce, diced tomatoes, beans, soup, Worcestershire sauce, and seasoning.
  6. Add cooked spaghetti and mix well.
  7. Stir in half the cheese and half the bacon.
  8. Transfer to a baking dish and cover with foil.
  9. Bake for 20 to 25 minutes.
  10. Add remaining cheese and bake until melted and golden.
  11. Top with remaining bacon and serve.

Notes

Cook pasta slightly firm to avoid a mushy texture. Add extra cheese when reheating for best results. Store leftovers in the fridge up to 3 days or freeze up to 3 months.
