This Cowboy Chicken Spaghetti is creamy, smoky, and packed with bold flavor. Juicy chicken, buttery garlic sauce, and cheesy pasta come together in a quick and cozy one pot dinner perfect for busy weeknights.
Ingredients

- 1½ lb chicken breast, cut into pieces
- 12 oz spaghetti or linguine
- 5 tbsp butter
- 2 shallots, chopped
- 2 cloves garlic, minced
- ½ tsp smoked paprika
- ½ tsp red pepper flakes
- 1 tsp lemon zest
- 1½ tbsp lemon juice
- ⅔ cup heavy cream
- ½ cup Parmesan cheese
- Fresh parsley and chives
- Salt and pepper
Instructions
- Cook pasta and reserve ½ cup pasta water.
- Season and cook chicken in butter until golden. Remove.
- Cook shallots, garlic, and spices in remaining butter.
- Add lemon juice and zest, then cream. Simmer.
- Stir in Parmesan until smooth.
- Add chicken back in.
- Toss with pasta and a splash of pasta water.
- Mix until coated and creamy.
- Garnish with herbs and serve.
Notes
Do not skip the pasta water for the best texture. Adjust spice to your taste. Best served fresh and warm.
