Description

This Cowboy Chicken Spaghetti is creamy, smoky, and packed with bold flavor. Juicy chicken, buttery garlic sauce, and cheesy pasta come together in a quick and cozy one pot dinner perfect for busy weeknights.


Ingredients

Scale
  • lb chicken breast, cut into pieces
  • 12 oz spaghetti or linguine
  • 5 tbsp butter
  • 2 shallots, chopped
  • 2 cloves garlic, minced
  • ½ tsp smoked paprika
  • ½ tsp red pepper flakes
  • 1 tsp lemon zest
  • 1½ tbsp lemon juice
  • ⅔ cup heavy cream
  • ½ cup Parmesan cheese
  • Fresh parsley and chives
  • Salt and pepper


Instructions

  1. Cook pasta and reserve ½ cup pasta water.
  2. Season and cook chicken in butter until golden. Remove.
  3. Cook shallots, garlic, and spices in remaining butter.
  4. Add lemon juice and zest, then cream. Simmer.
  5. Stir in Parmesan until smooth.
  6. Add chicken back in.
  7. Toss with pasta and a splash of pasta water.
  8. Mix until coated and creamy.
  9. Garnish with herbs and serve.

Notes

Do not skip the pasta water for the best texture. Adjust spice to your taste. Best served fresh and warm.
