Description

This cowboy butter spaghetti is buttery herby slightly spicy and wrapped in a creamy sauce that clings to every strand of pasta. It feels fancy but is surprisingly simple and perfect for a cozy flavorful dinner.


Ingredients

  • 1/2 cup salted butter softened
  • 2 tablespoons mustard
  • 2 tablespoons chopped parsley
  • 4 teaspoons fresh thyme
  • 2 teaspoons lemon juice
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Pinch cayenne pepper
  • Pinch red chili flakes
  • 1 pound spaghetti
  • 1 1/2 cups heavy cream
  • 1 teaspoon lemon juice
  • 1/8 teaspoon garlic salt
  • Pinch red pepper flakes
  • 1/4 cup reserved pasta water
  • Fresh parsley for garnish


Instructions

  1. Mix all cowboy butter ingredients in a bowl until smooth
  2. Cover and refrigerate for at least 2 hours if possible
  3. Cook spaghetti in salted boiling water until tender then reserve pasta water and drain
  4. In a large pan melt some of the butter over medium low heat
  5. Add cream lemon juice garlic salt and red pepper flakes and heat gently
  6. Toss in cooked spaghetti and mix well
  7. Add pasta water as needed to loosen the sauce
  8. Season to taste and garnish with parsley before serving

Notes

Chill the butter for best flavor Keep heat low to avoid separating the sauce Add chicken shrimp or bacon for extra protein Adjust spice to taste
