  • 1/2 cup ketchup
  • 1 tablespoon Dijon mustard
  • 2 tablespoons brown sugar
  • 1 medium onion, diced
  • 1/2 cup green bell pepper, finely chopped
  • 2 teaspoons fresh thyme
  • 2 teaspoons minced garlic
  • 1 1/2 pounds ground beef
  • 3/4 cup breadcrumbs
  • 1 large egg
  • 2 tablespoons ketchup
  • 1 to 1 1/2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 tablespoon Worcestershire sauce
  • 1/2 tablespoon beef bouillon powder
  • 1/4 cup milk


Instructions

  1. Preheat oven to 350°F. Line a baking sheet or baking pan with parchment paper.
  2. Arrange the bacon strips slightly overlapping on the parchment paper to create a base large enough to wrap around the meatloaf.
  3. In a small bowl, combine ketchup, Dijon mustard, and brown sugar. Stir until smooth and set aside.
  4. Heat a drizzle of oil in a skillet over medium heat. Add onion, garlic, thyme, and bell pepper. Sauté for 2 to 3 minutes until softened and fragrant. Remove from heat and let cool slightly.
  5. In a large mixing bowl, combine ground beef, breadcrumbs, egg, ketchup, salt, pepper, Worcestershire sauce, beef bouillon powder, milk, and the cooled vegetable mixture.
  6. Mix gently until just combined. Do not overmix or the meatloaf can become dense.
  7. Shape the meat mixture into a loaf directly on top of the bacon strips.
  8. Brush about two-thirds of the glaze over the top and sides of the meatloaf.
  9. Carefully wrap the bacon strips around the meatloaf, overlapping slightly as needed.
  10. Brush the remaining glaze over the bacon wrapped loaf.
  11. Bake for 45 to 60 minutes, or until the internal temperature reaches 160°F using a meat thermometer.
  12. Let the meatloaf rest for 10 minutes before slicing and serving.
