  • 2 cups frozen peas and carrots, peas and corn, or succotash
  • 1/3 cup flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon thyme
  • 1/2 teaspoon Italian seasoning
  • 1 cup chicken broth
  • 2/3 cup milk or fat free half and half
  • 2 cups leftover turkey or rotisserie chicken, chopped
  • 1/2 cup Parmesan or Pecorino Romano cheese, grated
  • 1 package refrigerated crescent rolls or crescent sheet


Instructions

  1. Preheat oven to 375°F and grease an 8×11 casserole dish.
  2. Heat bacon fat or oil in a large skillet. Add garlic, celery, onion, and bell pepper and cook for 5 minutes until tender.
  3. Stir in frozen vegetables.
  4. Add flour, salt, pepper, thyme, and Italian seasoning and whisk well to coat the vegetables.
  5. Slowly pour in broth and milk, stirring constantly until the mixture simmers and thickens into a creamy sauce.
  6. Remove from heat and fold in chopped turkey and grated cheese.
  7. Pour the filling into the prepared casserole dish.
  8. Roll out crescent dough, pinching seams if needed, and lay it over the filling. Crimp edges and cut a few slits for steam.
  9. Bake for 30 minutes or until the crust is golden brown and the filling is bubbling.
  10. Let rest for 10 minutes before serving so the filling sets.

Notes
