Ingredients
Scale
- 8 to 10 lb bone in ham
- 2 cups chicken stock
- Pork rub, to taste
- Olive oil, for coating
- 1/2 cup cherry preserves
- 1/4 cup brown sugar
- 1/4 cup honey
- 1 tablespoon Dijon mustard
Instructions
- Add cherry preserves, brown sugar, honey, and Dijon mustard to a saucepan. Whisk over medium low heat until smooth and simmer for 10 minutes, then remove from heat.
- Heat smoker or grill to 250°F. Pat ham dry, score if desired, coat with olive oil, and rub with pork rub.
- Place ham cut side down on the grill and smoke at 250°F for 1 1/2 hours.
- Transfer ham to a foil pan, add chicken stock, cover tightly, increase temperature to 325°F, and cook another 1 1/2 hours until internal temperature reaches 140°F.
- Remove ham, brush generously with cherry glaze, rest briefly, slice, and serve with extra glaze.
Notes
Most store bought hams are already cooked, so this recipe focuses on reheating and adding flavor. Let the ham rest before slicing to keep it juicy. Leftovers keep well and freeze beautifully.
