Description
A hearty, sweet and tangy Sloppy Joe filling nestled in tender bell peppers and topped with melty cheddar cheese—comfort food made easy and mess-free.

- 2 large bell peppers, any color
- 1 lb lean ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tsp chili powder
- 2 tsp smoked paprika
- ¾ cup ketchup
- 1 tbsp Dijon mustard
- 1 tbsp brown sugar
- 3 tsp Worcestershire sauce
- 1 cup shredded cheddar cheese
- Chopped parsley for topping (optional)
- ½ cup water
Instructions
- Slice peppers in half from top to bottom, remove seeds and membranes.
- In a large skillet, brown ground beef over medium-high heat.
- Add onion and garlic; cook 3–4 minutes.
- Stir in ketchup, mustard, chili powder, paprika, brown sugar, Worcestershire, and water. Simmer 10 minutes until thickened.
- Spoon filling into pepper halves.
- Place in air fryer basket and cook at 350°F for 8–10 minutes (or bake at 375°F for 20–25 minutes).
- Sprinkle cheese on top, cook until melted.
- Garnish with parsley if desired. Serve hot.
Notes
Store leftovers in an airtight container for up to 3–4 days. Double the filling to freeze for easy meals later. Try with green, red, orange, or yellow peppers—each gives a slightly different flavor!
