Ingredients

  • 1 lb shaved steak (sirloin or your favorite cut)
  • Salt and pepper, to taste
  • 8 small flour or corn tortillas
  • ½ cup chimichurri sauce (homemade or store-bought)
  • 1 ripe avocado, sliced or chopped
  • 1 cup cherry tomatoes, diced
  • 1 cup shredded lettuce
  • ½ cup crumbled feta cheese
  • 1 lime, cut into wedges
  • Optional: pickled onions, jalapeños, shredded cheese, black beans, corn, fresh cilantro


Instructions

  1. Heat a skillet or grill pan over high heat. Season shaved steak with salt and pepper. Add steak to the hot pan and cook for 1–2 minutes, stirring until browned. Remove from heat and let rest for 5–10 minutes.
  2. Warm tortillas in a clean skillet over medium heat for 30 seconds per side, until soft and golden.
  3. Layer shaved steak on each tortilla. Drizzle with chimichurri sauce. Top with avocado, tomatoes, lettuce, feta, and any extras you like. Squeeze lime juice over the top.
