Description
If you want a lighter dinner that still feels satisfying, these salmon burgers in the air fryer are it. Crispy on the outside, juicy inside, and packed with fresh herbs and lemon, they come together fast and feel just a little fancy without the effort.

- 3 tbsp panko + 3/4 cup panko (divided)
- 3 tbsp parsley, chopped
- 2 tbsp scallions, chopped
- 2 tsp Dijon mustard
- 2 tbsp mayonnaise
- Juice of half a lemon
- 1 tsp salt
- 1 tsp pepper
- 1/4 tsp cayenne pepper
- 15 oz skinless salmon, cut into chunks
- 4 brioche buns
- 2 tbsp mayo
- 3 tbsp Greek yogurt
- Juice of half a lemon
- Fresh dill, chopped
Instructions
- In a bowl, combine 3 tbsp panko, parsley, scallions, Dijon mustard, mayonnaise, lemon juice, salt, pepper, and cayenne.
- Add remaining panko to a separate bowl.
- Pulse salmon twice in a food processor to keep some texture.
- Mix salmon with the seasoned mixture gently.
- Form into patties using about 1/3 cup per patty.
- Lightly coat each patty in panko.
- Chill patties for 10 minutes.
- Air fry at 370°F for about 6 minutes until golden and cooked through.
- Mix mayo, yogurt, dill, and lemon juice to make the sauce.
- Assemble burgers with sauce and toppings, then serve.
Notes
Do not overprocess the salmon or the texture will turn mushy. Chilling the patties helps them hold together. Watch your air fryer the first time since cook times can vary. Fresh lemon really brightens the flavor, so do not skip it.
