Description
This Roast Dinner features a Roasted Garlic Rack of Lamb that’s elegant, flavorful, and surprisingly simple. Perfect for holidays, date nights, or cozy family gatherings.

- 6 garlic cloves
- 3 tbsp extra virgin olive oil, divided
- 2 racks grass-fed lamb
- 2 tbsp minced tarragon
- 1 tbsp minced thyme
- 1 tbsp thinly sliced chives
- Salt and pepper, to taste
Instructions
- Preheat oven to 400°F. Roast garlic with 1½ tbsp oil and salt in foil pouch for 30 minutes. Mash into a paste.
- Raise oven to 425°F. Mix roasted garlic with remaining oil, tarragon, thyme, chives, salt, and pepper to make a paste.
- Let lamb come to room temp. Season with salt and pepper, rub with garlic-herb paste.
- Place on baking sheet, fat side up. Roast 5 minutes at 425°F, then lower oven to 375°F. Continue roasting to 130°F (medium-rare, 10–12 min) or 135–140°F (medium, 14–16 min).
- Rest under foil for 10 min. Slice and serve.
Notes
Roast garlic ahead to save time. Use a thermometer for perfect doneness. Swap herbs as desired. Serve with classic sides like mashed potatoes and green beans.
