Description

Ingredients

  • 2 lbs chicken thighs (bone-in, skin-on)
  • 1 tsp salt
  • 1 tsp black pepper
  • Honey Mustard Glaze:
  • 2 tbsp olive oil
  • 1 tbsp whole grain Dijon mustard
  • 1 tbsp mustard
  • 2 tbsp honey
  • 6 cloves garlic, minced
  • 1/4 tsp red pepper flakes


Instructions

  1. Preheat oven to 425°F (218°C).
  2. Season chicken thighs with salt and pepper.
  3. Whisk together all glaze ingredients. Pour over chicken, toss to coat.
  4. Arrange chicken in a baking dish. Pour in all the glaze.
  5. Bake 35 minutes, until skin is crisp and chicken is 165°F.
  6. Rest 10 minutes, then serve.

Notes

Broil briefly at the end if you want extra crispy skin. Freeze leftovers for up to 3 months. The glaze is delicious over veggies or potatoes—double it if you like extra sauce.
