Description

This homemade meatloaf is moist, flavorful, and topped with a sweet-tangy mustard glaze that adds a bold twist to a classic comfort food favorite.


Ingredients

  • 2 lbs ground beef (or a mix of beef and pork)
  • 1 cup breadcrumbs (regular or panko)
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 2 large eggs
  • 1/2 cup milk
  • 2 tbsp Dijon mustard
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/3 cup ketchup
  • 2 tbsp Dijon mustard (for glaze)
  • 2 tbsp brown sugar
  • 1 tsp apple cider vinegar


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine breadcrumbs, milk, and eggs. Let sit for 1 minute.
  3. Add ground meat, onion, garlic, Dijon mustard, Worcestershire sauce, salt, and pepper. Mix gently.
  4. Shape into a loaf and place in a greased loaf pan or on a baking sheet.
  5. Bake for 40 minutes.
  6. Meanwhile, whisk together ketchup, mustard, brown sugar, and vinegar to make the glaze.
  7. After 40 minutes, brush half of the glaze on top of the loaf.
  8. Return to the oven and bake for 20–25 minutes, or until internal temp reaches 160°F (71°C).
  9. Brush with remaining glaze before serving.
  10. Let rest for 10 minutes before slicing.

Notes

To keep meatloaf moist, avoid overmixing and let it rest before slicing. Great for next-day sandwiches!
