Ultra-tender, juicy corned beef braised in Guinness with brown sugar—flavor-packed, easy, and perfect for St. Patrick’s Day or cozy comfort food nights.

- 4 lbs corned beef brisket
- 1 cup brown sugar
- 12 oz Guinness (draught or stout)
- (Optional: seasoning packet, carrots, potatoes, cabbage)
Instructions
- Preheat oven to 300°F. Rinse and dry brisket; rub all over with brown sugar.
- Place brisket on a rack in roasting pan or Dutch oven. Sprinkle with seasoning packet (if using).
- Pour Guinness over and around brisket to moisten sugar coating.
- Cover and braise 2½ hours, or until very tender (190°F internal temp). Add veggies in last hour if desired.
- Let rest 5–10 min. Slice against the grain. Serve with pan juices and sides.
Notes
For slow cooker, cook on low 8–10 hours. Use less sugar for a less sweet flavor. Store leftovers in liquid for maximum tenderness.
