Description

A one-pan ground turkey pot pie topped with flaky puff pastry squares. Hearty, comforting, and perfect for easy weeknight dinners.


Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 lb ground turkey
  • 2 cans condensed cream of potato soup 10.5 oz each
  • 10 oz frozen mixed vegetables
  • 2/3 cup frozen peas
  • 1 teaspoon garlic powder optional
  • 1 teaspoon thyme
  • 1 teaspoon parsley
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon pepper
  • 1/2 teaspoon sea salt
  • 1 sheet puff pastry thawed
  • 1 egg


Instructions

  1. Preheat oven to 400°F.
  2. Heat olive oil in an oven proof pan over medium high heat.
  3. Add ground turkey and garlic powder if using and brown thoroughly until cooked through.
  4. Remove from heat and add soup vegetables peas and seasonings. Mix well and press into an even layer.
  5. Cut puff pastry into small squares and arrange over the filling.
  6. Whisk egg with one teaspoon water and brush over pastry pieces.
  7. Bake uncovered 25 minutes or until pastry is golden and the filling is bubbling.
  8. Let rest 5 to 7 minutes before serving.

Notes

Store leftovers 3 to 4 days in the refrigerator. Freeze up to 3 months once cooled. For a creamier filling add a splash of milk when mixing the filling.
