Description
A one-pan ground turkey pot pie topped with flaky puff pastry squares. Hearty, comforting, and perfect for easy weeknight dinners.

- 1 tablespoon olive oil
- 1 lb ground turkey
- 2 cans condensed cream of potato soup 10.5 oz each
- 10 oz frozen mixed vegetables
- 2/3 cup frozen peas
- 1 teaspoon garlic powder optional
- 1 teaspoon thyme
- 1 teaspoon parsley
- 1/2 teaspoon onion powder
- 1/2 teaspoon pepper
- 1/2 teaspoon sea salt
- 1 sheet puff pastry thawed
- 1 egg
Instructions
- Preheat oven to 400°F.
- Heat olive oil in an oven proof pan over medium high heat.
- Add ground turkey and garlic powder if using and brown thoroughly until cooked through.
- Remove from heat and add soup vegetables peas and seasonings. Mix well and press into an even layer.
- Cut puff pastry into small squares and arrange over the filling.
- Whisk egg with one teaspoon water and brush over pastry pieces.
- Bake uncovered 25 minutes or until pastry is golden and the filling is bubbling.
- Let rest 5 to 7 minutes before serving.
Notes
Store leftovers 3 to 4 days in the refrigerator. Freeze up to 3 months once cooled. For a creamier filling add a splash of milk when mixing the filling.
