Ingredients

  • 2 rib eye steaks boneless about 1 pound each
  • 2 teaspoons BBQ seasoning or salted steak rub
  • 1 tablespoon fresh chopped chives optional

Instructions

  1. Preheat the grill to high around 500 to 600°F.
  2. Pat the rib eyes dry and season generously with BBQ seasoning.
  3. Place the steaks on the grill over direct heat and close the lid. Grill 3 to 4 minutes per side flipping when grill marks appear.
  4. Continue grilling until the internal temperature reaches 125°F for medium rare or 135°F for medium.
  5. Remove the steaks and rest under foil for 10 minutes.
  6. Slice against the grain garnish with chives if desired and serve.

Notes

For best results use a thermometer to gauge doneness. Grill time varies depending on steak thickness and grill temperature. Leftover grilled rib eye makes great tacos pizza toppings and salads.
