Ingredients

  • 1/2 cup olive oil
  • 1/4 cup fresh lime juice
  • 3 garlic cloves, minced
  • 1 tbsp cilantro
  • 1 tbsp Worcestershire sauce
  • 1/4 tsp crushed red pepper
  • 1/2 tsp cumin
  • Salt and pepper
  • 1/3 cup mayonnaise
  • 1/2 tbsp red wine vinegar
  • 2 tsp lemon juice
  • 1 1/2 tbsp olive oil
  • 12 tbsp sriracha
  • 1 garlic clove
  • 2 tsp honey
  • Salt and pepper
  • 78 cups chopped romaine
  • 10 oz tomatoes
  • 1/4 cup red onion
  • 1 cup queso fresco
  • Fresh cilantro


Instructions

  1. Whisk marinade ingredients and coat steak. Marinate at least 2 hours.
  2. Mix dressing ingredients and chill.
  3. Preheat grill to medium-high heat and cook steak for 3 to 5 minutes per side.
  4. Let steak rest for 5 minutes.
  5. Slice steak thinly against the grain.
  6. Toss salad ingredients together, top with steak, and drizzle with dressing.
