  • 1 avocado, diced
  • 1/2 cup cucumber
  • 1/2 cup radish
  • 1/2 cup olives
  • 4 oz feta cheese
  • 1/3 cup pumpkin seeds or chickpeas
  • 1/4 cup green onion
  • Fresh herbs
  • 1 cup Greek yogurt
  • Fresh herbs (parsley, basil, dill, mint)
  • Juice and zest of 1 lemon
  • 2 cloves garlic
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • 1/4 cup olive oil
  • Salt and pepper


Instructions

  1. Remove steak from fridge 30 minutes before cooking.
  2. Blend all dressing ingredients until smooth.
  3. Toss lettuce with a small amount of dressing.
  4. Add all toppings to the salad.
  5. Season and cook steak in a hot skillet for 4 to 5 minutes per side.
  6. Let steak rest for 10 minutes.
  7. Slice steak against the grain.
  8. Add steak to salad and drizzle with dressing.
