Description

A juicy, tender diner-style meatloaf with classic comfort and a few modern twists, perfect for family dinners or leftovers like sandwiches and casseroles.


Ingredients

Scale
  • 1 lb lean ground beef (80% lean for juiciness)
  • 1 small onion, finely chopped
  • 1 garlic clove, minced (or 1/8 tsp garlic powder)
  • 2 slices bread with crust, torn
  • 1/4 cup milk
  • 1 large egg
  • 2 tsp Worcestershire sauce
  • 1/4 tsp ground mustard
  • 1/4 tsp dried sage
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 1/3 cup ketchup (or chili sauce/barbecue sauce)


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine beef, onion, garlic, bread, milk, egg, Worcestershire, sage, mustard, salt, and pepper. Mix gently.
  3. Place mixture in an ungreased pan. Form into an 8×4-inch loaf.
  4. Spread ketchup (or sauce of choice) on top.
  5. Bake 50–60 minutes until fully cooked. Internal temp should reach 160°F.
  6. Let stand 5 minutes before slicing.

Notes

Make it ahead and refrigerate for up to 24 hours before baking. Great for sandwiches or casseroles with leftovers.
