Crockpot Corned Beef

Description

This crockpot corned beef is the ultimate no-stress, flavor-loaded dinner. Simmered with Guinness, garlic, and brown sugar, it turns out buttery, juicy, and perfect for holidays, family dinners, or easy weeknights.


Ingredients

Scale
  • 3 pounds raw corned beef brisket with spice packet
  • 2 tablespoons light brown sugar
  • 5 cloves garlic, peeled and halved
  • 2 cups Guinness beer or dark beer
  • 1 pound baby potatoes
  • 6 large carrots, peeled and cut as desired
  • Chopped fresh parsley, for garnish


Instructions

  1. Place brisket, fat side up, in slow cooker. Sprinkle spice packet, brown sugar, and garlic around the beef.
  2. Pour beer around the beef, not directly over the top.
  3. Cover and cook on LOW for 4 to 5 hours.
  4. Add potatoes and carrots, then cover and cook another 2 to 3 hours until fork-tender.
  5. Optional: Add cabbage during the last hour of cooking.
  6. Remove beef and let rest 15 minutes, then slice thinly against the grain.
  7. Serve with vegetables, garnish with parsley, and spoon juices on top.

Notes

For crispy edges, broil sliced beef for a few minutes after cooking. Prefer a crust? Sear the brisket before placing it in the slow cooker. Store leftovers up to 4 days in the fridge or freeze sliced beef for up to 3 months.
