- 2 cups shredded rotisserie chicken
- ¼ cup buffalo sauce (Frank’s)
- 2 Tbsp plain Greek yogurt (or sour cream)
- 2 green onions, sliced
- ¼ tsp garlic powder
- Kosher salt and black pepper, to taste
- Avocado oil, for greasing and brushing
- 2½ cups shredded cheddar cheese
- 12 corn tortillas
Instructions
- Preheat oven to 425°F.
- In a bowl, mix chicken, buffalo sauce, Greek yogurt, green onions, garlic powder, salt, and pepper.
- Microwave tortillas in a towel for 45–60 seconds until pliable.
- Grease a baking sheet with oil. Lay tortillas flat, sprinkle cheese on half of each, top with chicken mixture, then more cheese. Fold and press lightly.
- Brush folded tortillas with oil. Bake 18–24 minutes until golden and crispy.
- Serve with toppings like jalapeño ranch, guacamole, lettuce, or pickled onions.
Notes
To reheat, use the air fryer or oven to keep them crispy. Customize with extra spice, different cheeses, or alternative proteins like ground chicken or jackfruit.
