Description

This cheeseburger-style Beef Wellington is the ultimate showstopper—juicy ground beef, crispy bacon, sharp cheddar, and golden puff pastry, baked to perfection.


Ingredients

Scale
  • 6 ounces frozen puff pastry
  • 1 slice bacon, cut in half
  • 8 ounces ground beef
  • Salt and freshly ground black pepper, to taste
  • Cayenne pepper, to taste
  • ½ ounce sharp cheddar cheese
  • 1 large egg


Instructions

  1. Cook bacon in a skillet until crisp. Drain and set aside.
  2. Shape beef into a thick patty, season well, and sear 2 minutes per side in the skillet. Cool in the fridge.
  3. Roll pastry to ⅛ inch thick. Cut one 5¼-inch circle and one 7¼-inch circle. Chill.
  4. Layer the smaller pastry on a sheet pan, then burger, bacon, cheese. Brush edges with egg wash.
  5. Top with the larger pastry circle, cut a small vent, seal the edges, and chill 20 minutes.
  6. Preheat oven to 450°F (230°C). Crimp the edges, brush with egg wash, and bake 20–22 minutes until golden.
  7. Cool 5 minutes, then slice and serve hot.

Notes

For variety, add pickles, caramelized onions, or switch up the cheese. For a crowd, double the recipe and space Wellingtons out on the baking sheet.
