Description
This cheeseburger-style Beef Wellington is the ultimate showstopper—juicy ground beef, crispy bacon, sharp cheddar, and golden puff pastry, baked to perfection.

- 6 ounces frozen puff pastry
- 1 slice bacon, cut in half
- 8 ounces ground beef
- Salt and freshly ground black pepper, to taste
- Cayenne pepper, to taste
- ½ ounce sharp cheddar cheese
- 1 large egg
Instructions
- Cook bacon in a skillet until crisp. Drain and set aside.
- Shape beef into a thick patty, season well, and sear 2 minutes per side in the skillet. Cool in the fridge.
- Roll pastry to ⅛ inch thick. Cut one 5¼-inch circle and one 7¼-inch circle. Chill.
- Layer the smaller pastry on a sheet pan, then burger, bacon, cheese. Brush edges with egg wash.
- Top with the larger pastry circle, cut a small vent, seal the edges, and chill 20 minutes.
- Preheat oven to 450°F (230°C). Crimp the edges, brush with egg wash, and bake 20–22 minutes until golden.
- Cool 5 minutes, then slice and serve hot.
Notes
For variety, add pickles, caramelized onions, or switch up the cheese. For a crowd, double the recipe and space Wellingtons out on the baking sheet.
