  • 21 oz beef sirloin steak (cut into two large steaks)
  • 1 tbsp kosher salt
  • 1/2 tbsp black pepper
  • 2 tbsp butter
  • 2 garlic cloves, minced
  • 1 tbsp fresh thyme
  • 1 tbsp fresh parsley
  • 1 tbsp olive oil


Instructions

  1. Pat the sirloin steak dry with paper towels. Season both sides with salt and pepper.
  2. Heat olive oil in a cast iron skillet over high heat. Sear steaks for about 4 minutes per side, until deeply browned. Sear the edges briefly.
  3. Reduce heat to medium. Add butter, garlic, thyme, and parsley to the pan. Spoon the melted butter and herbs over the steak for 1–2 minutes, until fragrant and cooked to your preferred doneness.
  4. Remove steak and let it rest for 10 minutes before slicing against the grain. Serve with your favorite sides.
