- 2.5 to 3 lbs half leg of lamb, bone-in
- 4 garlic cloves
- 2 tablespoons fresh rosemary
- 4 tablespoons olive oil
- 1 tablespoon white wine vinegar
- 1 tablespoon dried oregano
- 1 teaspoon garlic granules
- 1 teaspoon salt
- 1 beef stock cube
- 6 to 8 potatoes, cubed
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1/2 tablespoon lemon juice
- Salt and pepper
Instructions
- Blend garlic, rosemary, olive oil, vinegar, oregano, garlic granules, salt, and stock cube into a marinade.
- Coat the lamb fully and wrap tightly in foil.
- Preheat air fryer to 375°F.
- Cook wrapped lamb for 40 minutes, turning halfway.
- Toss potatoes with olive oil, oregano, lemon juice, salt, and pepper.
- Unwrap lamb and place in basket with potatoes.
- Cook for another 30 to 40 minutes until done.
- Let rest for 10 minutes before slicing.
Notes
Use a thermometer to ensure perfect doneness. Wrap the lamb first to keep it tender, then finish uncovered for a crispy exterior. Cut potatoes evenly for consistent cooking. Let the lamb rest before slicing to keep juices locked in.
