Description

Ingredients

  • 2.5 to 3 lbs half leg of lamb, bone-in
  • 4 garlic cloves
  • 2 tablespoons fresh rosemary
  • 4 tablespoons olive oil
  • 1 tablespoon white wine vinegar
  • 1 tablespoon dried oregano
  • 1 teaspoon garlic granules
  • 1 teaspoon salt
  • 1 beef stock cube
  • 6 to 8 potatoes, cubed
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1/2 tablespoon lemon juice
  • Salt and pepper


Instructions

  1. Blend garlic, rosemary, olive oil, vinegar, oregano, garlic granules, salt, and stock cube into a marinade.
  2. Coat the lamb fully and wrap tightly in foil.
  3. Preheat air fryer to 375°F.
  4. Cook wrapped lamb for 40 minutes, turning halfway.
  5. Toss potatoes with olive oil, oregano, lemon juice, salt, and pepper.
  6. Unwrap lamb and place in basket with potatoes.
  7. Cook for another 30 to 40 minutes until done.
  8. Let rest for 10 minutes before slicing.

Use a thermometer to ensure perfect doneness. Wrap the lamb first to keep it tender, then finish uncovered for a crispy exterior. Cut potatoes evenly for consistent cooking. Let the lamb rest before slicing to keep juices locked in.
