Description
These Air Fryer Lamb Shanks are fall-off-the-bone tender with rich, comforting flavor and surprisingly easy to make. Using a simple two-stage cooking method, you get a beautifully seared exterior followed by juicy, slow-cooked tenderness, all without spending hours in the kitchen.
Ingredients
- 4 lamb shanks
- 2 teaspoons garlic (crushed)
- 1½ teaspoons oregano
- 2½ teaspoons olive oil
- ¼ teaspoon smoked paprika
- 1 teaspoon rosemary leaves
- 1½ teaspoons salt
- ¼ teaspoon black pepper
- 230 ml chicken stock
Instructions
- Preheat air fryer to 390°F (200°C).
- Rub lamb shanks with olive oil, garlic, oregano, rosemary, paprika, salt, and pepper.
- Place in air fryer and cook for 20 minutes.
- Reduce temperature to 300°F (150°C).
- Add chicken stock to the basket.
- Continue cooking for 40 to 50 minutes, turning halfway through, until tender.
- Let rest for 10 minutes before serving.
Notes
Do not skip the chicken stock as it helps create steam and keeps the meat tender. Handle the shanks gently when turning as they become very soft. Let the lamb rest before serving to retain juices. Add extra cooking time if needed until the meat is fall-apart tender.
