Description
An effortless, crispy, and foolproof air fryer beef wellington for two—golden pastry, juicy beef, and savory mushrooms with zero stress. Perfect for date night or a fancy Tuesday dinner.
Ingredients

- 1 tbsp olive oil
- 2 x 3.5 cm-thick (about 150g each) beef eye fillet steaks
- 200g button mushrooms, finely chopped
- 2 French shallots, finely chopped
- 2 garlic cloves, crushed
- 7 slices prosciutto
- 2 tsp Dijon mustard
- 1 sheet frozen puff pastry, thawed
- 1 egg, lightly whisked
- Steamed broccolini & onion relish, to serve (optional)
Instructions
- Heat oil in a frying pan on high. Sear steaks 3–4 mins until browned all over. Chill in fridge.
- Reduce heat to medium. Add mushrooms, shallots, and garlic. Cook 15 mins until golden and dry. Cool.
- Lay 6 prosciutto slices on plastic wrap, spread with mushroom mix, place steaks, brush with mustard. Fold prosciutto over steaks, cover with last slice, wrap tightly, chill 20 mins.
- Lay out pastry, center steak/prosciutto log, fold pastry over, tuck ends, place seam-side down on baking paper. Brush with egg, score top.
- Place in air fryer basket. Cook at 180°C (350°F) for 20 minutes (medium rare) or until cooked as you like.
- Let rest a few minutes, slice, and serve with broccolini and onion relish.
Notes
Dry everything well to avoid soggy pastry. Chill between steps for better handling. Reheat leftovers in the air fryer at 160°C for 5–7 minutes.
